Gluten Free Muffins

2 cups gluten free flour mix

2/3 cup sugar

2 1/4 tsp baking powder

1 tsp baking soda

3/4 tsp xanthan gum

1/4 tsp salt

1 cup chopped fruit of choice

1/2 cup chopped nuts of choice

1/2 cup milk

1/2 cup canola oil

2 eggs

—–Streusel Topping—–

1/2 cup melted butter

1 cup gluten free flour mix

1 1/2 cups brown sugar

1 cup chopped nut of choice, coconut, or GF oats

1. Mix all together. Let set 30 minutes. Divide into 12 muffin cups. Top

with streusel. Bake at 375° for 18 minutes.
