Sedona Southwest Cheesecake

1 cup finely crushed tortilla chips
16 ounces cream cheese, softened
2 eggs
½ cup sour cream
1 cup crumbled Mexican cheese or Monterey Jack cheese
¼ teaspoon cayenne pepper
½ cup finely chopped yellow bell pepper
½ cup finely chopped red bell peppers
½ cup finely chopped green onions
¼ cup sliced black olives
1 Preheat oven to 325°. Spray springform pan with cooking spray. Grind tortilla chips and spread into bottom of springform pan.
2 Beat cream cheese, sour cream and eggs until smooth. Add remaining ingredients reserving some for garnishing.
3 Pour into pan and bake for 34-45 minutes.
4 Serve in small pie shaped wedges.
