Buckwheat Zucchini Bread

1 ¼ Cups Buckwheat flour

1 ½ Cups Whole wheat flour

½ Cup Wheat germ

1 tsp     Salt

¾ tsp Baking powder

1 ¾ tsp Baking soda

1 ½ Cup Chopped pecans

4 Eggs

2/3 Cup Sugar

2/3 Cup Brown Sugar

1 Cup Applesauce

1 Tbs. Male Flavoring

2   Cups Shredded zucchini

3 Tbs. Sesame seeds

Mix together the dry ingredients in a large bowl.   In another bowl mix  together the eggs, sugars and maple flavoring. Mix together dry mix with sugar mix.  Fold in the  zucchini and  the sesame seed.  Spray bread pans with cooking spray.  Fill pans 3/4 full and bake at 350 for 25-30 minutes for small pans, 40-45 minutes for large pan.

Makes 5 small pans or 2 large bread pans
